Does the architectural project comply with the standards?
The Food and Economic Safety Authority (ASAE) is the body responsible for overseeing the entire food chain, from production to processing and sale to the public. But did you know that it also approves the design of establishments? The design of the space must consider the standards required by this entity – whether it’s a new building or a refurbishment. The structures of the catering establishment must be designed in accordance with the following standards:
- Allow good access for employees;
- Enable the correct installation of equipment;
- Facilitate production operations under the right temperature and ventilation conditions;
Facilitate all sanitizing operations; - Prevent or minimize the entry and growth of pests.
Have property changes been communicated?
The owner must always notify ASAE of all the establishments under his control to register them. The information provided must always be up to date, including any significant change in activity and the possible closure of an existing establishment.
Is the production flow unidirectional?
The flow of production within establishments must always follow a unidirectional circuit, in a single direction from reception to consumption and from consumption to exit. This logic is designed to prevent cross-contamination between different operations, which could lead to food becoming unfit for human consumption.
Is the equipment ergonomic?
As far as the equipment is concerned, it must be chosen bearing in mind that it must be easy for operators to handle. In addition, they must guarantee the efficiency of production operations with this equipment and enable it to be properly sanitized and disinfected.
Are the surfaces easily sanitizable?
Surfaces must be in good condition and easily cleaned and disinfected. ASAE also requires the use of impermeable, non-absorbent, washable and non-toxic materials.
Is the floor waterproof?
The floor must be covered with impermeable, non-absorbent material that allows for easy cleaning and disinfection. If waste is emitted, the floor must allow adequate drainage.
Do employees follow personal hygiene rules?
Regarding the health regulations for employees working in the establishment, they are
required to maintain a high level of personal hygiene, using appropriate, clean and protective
clothing (if justified). According to the ASAE, employees must also:
- Maintain careful personal hygiene in terms of body, clothes and clothing;
- Store clothing and other material used outside the production site;
- Only wear clothing on work premises;
- Keep clothing clean and in good repair;
- Wear appropriate footwear that is exclusive to the workplace;
- Keep your nails short, clean and free of varnish;
- Wash your hands properly;
- Do not eat, drink or chew gum in places where food is handled.
